Je nach Cut, Fettstruktur und gew\u00fcnschtem Aromaprofil setzen wir gezielt auf unterschiedliche Methoden.<\/p>\n\n\n\n<p><strong>Dry Aged<\/strong>, also die Reifung am Knochen, verleiht dem Fleisch Tiefe, Charakter und eine markante Aromatik. <strong>Wet Aged<\/strong>, die Reifung im Vakuum, bewahrt Saftigkeit und sorgt f\u00fcr eine besonders feine Textur.<\/p>\n\n\n\n<p>Unsere Entscheidung f\u00fcr die jeweilige Reifung erfolgt bewusst und mit Erfahrung. Nach dem optimalen Reifezeitpunkt wird jedes St\u00fcck bei <strong>\u201340 \u00b0C superfrozen<\/strong>, um den erreichten Zustand exakt zu konservieren.
